Sunset Sherbert
Also known as: Sunset Sherbet, Sherbert, Sherbet, Sherbert OG
Breeder: Mr. Sherbinski (Mario Guzman)
Sunset Sherbert is one of the most historically significant cannabis strains of the 2010s, serving as the critical genetic bridge between the original Girl Scout Cookies era and the modern dessert strain movement dominated by Gelato and its descendants. Created in 2012 through an accidental pollination event in San Francisco's Sunset District, it proved that cannabis could deliver sweet, candy-forward flavor profiles without sacrificing potency. As the direct parent of Gelato, its genetic fingerprint extends into hundreds of modern hybrids including Gelato #33, Gelato #41, London Pound Cake, Runtz, Biscotti, and Wedding Cake derivatives. PhenoDB documents 399 direct crosses from Sunset Sherbert.
Lineage & Genetics
Cross: Girl Scout Cookies (Thin Mint cut) x Pink Panties
Girl Scout Cookies (Thin Mint cut): OG Kush x Durban Poison, bred by Cookie Fam Genetics (Jigga), indica-dominant hybrid, 20-28% THC, distinguished by deep purple coloration and minty-menthol aroma. Pink Panties: Burmese Kush x Florida Kush, bred by Jigga/Cookie Fam, named for striking pink pistils and sweet juicy fruit aroma, 70/30 indica-dominant, 10-11 week flowering time. Sherbinski described Pink Panties' yield as disappointing but its breeding value proved extraordinary.
Lineage Dispute
SUBX Genetics identifies the GSC parent as including Cherry Pie, which is not widely corroborated. Pink Panties parentage is listed variously as Burmese Kush x Florida Kush or OG Kush [South Florida] x (OG Kush [South Florida] x Burma).
Terpene Profile
Beta-Caryophyllene — Approximately 32% of total terpene profile (0.4-0.8% w/w); peppery, spicy, warm character
Limonene — Approximately 17% of total terpene profile (0.3-0.7% w/w); bright citrus, zesty orange
Fenchol — Approximately 11% of total terpene profile; earthy, herbal, slightly floral
Humulene — Up to 9%; earthy, woody, hoppy
Linalool — Up to 9% (0.1-0.3% w/w); floral, lavender, calming
Myrcene — Present (0.2-0.6% w/w); herbal, musky, fruity
Aroma: Layered and complex dessert nose. Top notes of tangy citrus (orange peel, lemon zest) and bright berry sweetness. Mid notes of candy, cream, purple cotton candy, and sweet yogurt. Base notes of earthy funk, skunky undertone from GSC heritage, and slight gas. Often described as reminiscent of rainbow sherbet ice cream.
Flavor: Inhale delivers sweet fruity honey, berry, and citrus candy. Exhale brings fruity yogurt, cream, and skunky earthiness that intensifies. Lingering sweet, slightly earthy aftertaste. A 4-week cure produces noticeably better terpene expression than a 2-week cure.
Effects & Experience
Onset: Immediate jolt of uplifted cerebral energy — euphoric, social, and creative. Sudden mood elevation and carefree mental state within 0-15 minutes. This sativa-forward onset distinguishes it from typical indica-dominant strains.
The cerebral brightness transitions into full-body relaxation that spreads gradually over 15-90 minutes. Described as surprisingly creative for an indica-leaning strain with enough physical ease to release tension without heavy couch-lock at moderate doses. At higher doses, sedative qualities become more pronounced and can induce couch-lock and sleep.
Duration: 2-3 hours typical. Body effects tend to outlast the cerebral component.

Growing Characteristics
Grow Tips: Sunset Sherbet is moderately sensitive to overfeeding — this is the single most commonly cited growing mistake. Start ALL new nutrients at half manufacturer's recommended dose and scale up over 3-4 days. Target EC 1.2-1.6 in veg, 1.6-2.0 in early flower. pH 5.8-6.2 in coco/hydro, 6.2-6.8 in soil. Begin CalMag from week 2 (100-150 ppm Ca, 40-60 ppm Mg with RO water). The plant naturally grows wide and bushy, making it highly responsive to canopy management. Top once above the 4th or 5th node during veg. LST after topping by bending and tying branches outward. ScrOG is highly recommended for maximum yield — fill approximately 70% of the net before flipping. Perform strategic defoliation at days 21 and 42 of flower, focusing on fan leaves blocking light or restricting airflow. Dense bud structure is the PRIMARY mold risk — maintain 40-45% RH in weeks 5-9 of flower with 30-50 air exchanges per hour. Strong canopy air movement is non-negotiable. Check inner bud sites regularly for gray mold. Start checking trichomes from end of week 7 using 60-100x magnification. Target 85-90% cloudy with 10-15% amber. Dry at 65-70°F, 45-50% RH for 7-10 days in complete darkness with gentle indirect airflow. Never point fans directly at buds. Cure in glass mason jars at 75% full, burping twice daily for first week, then tapering. Optimal cure is 4 weeks — this is where the sherbet and citrus terpene profile really opens up. Common mistakes: overfeeding, humidity too high in late flower, harvesting too early, not training the bushy structure, poor airflow, rushing the dry/cure, not supporting heavy colas from week 5 onward, and inconsistent environment causing hermaphroditism. CO2 enrichment (1000-1200 ppm) can push yields to 600-700 g/m². Fabric pots (3-5 gallon) preferred. Dropping nighttime temps by 10-15°F in final 2 weeks enhances purple coloration. Finding authentic genetics is noted as the hardest part — source from reputable seed banks or verified clone sources.
History & Origin
Created in 2012 through a happy accident when a male Pink Panties seedling pollinated an entire room of Thin Mint Cookies in Mr. Sherbinski's grandmother's flowering room in San Francisco's Sunset District. Sherbinski named it after Thrifty ice cream rainbow sherbet his mother bought him as a child. Rose to fame through San Francisco medical dispensaries and Bay Area underground, paralleling Instagram's growth. Defined the dessert strain category alongside GSC. Around 2014, Sherbinski and Jigga crossed Sunset Sherbert x Thin Mint Cookies to produce the Gelato line.
